The National Foundation for Celiac Awareness is a nonprofit group that educates individuals, healthcare providers and the food industry to understand the needs of those maintaining a medically necessary gluten free diet. The NFCA provides training and resources to the food industry and regulatory agencies.

According to the National Foundation for Celiac Awareness (NFCA), Gluten sensitivity is a condition affects 18 million Americans. Gluten sensitivity falls within the spectrum of gluten-related disorders. Symptoms of gluten sensitivity often overlap with those of celiac disease. Gluten sensitivity is not an autoimmune disease like celiac disease and does not result in the same intestinal damage.

Celiac disease is an autoimmune digestive disease that interferes with absorption of nutrients from food and can lead to malnourishment and other conditions. Even a very small amount of gluten contamination can cause an autoimmune reaction including both digestive and non-digestive symptoms, typically appearing a few hours or days after gluten has been ingested.

Gluten is found in Romanos pizza dough. When pizza dough is stretched, small gluten particles could remain on the pizza maker's hands, which then touch the cheese and toppings and could transfer to these ingredients. Due to the nature of Romanos products, and because our store does not have a separate gluten free area in the kitchen, there is a possibility for gluten exposure. Because of this, Romanos Gluten Free Crust is not recommended for customers with celiac disease. Because the risk for exposure is low, the pizza made with Romanos Gluten Free Crust is certainly an option for individuals with gluten sensitivities.

The ingredients in Romanos Gluten-Free Pizza crust: White rice four, filtered water, tapioca starch, cane sugar, non-fat dry milk, egg whites, olive oil, xanthan gum, yeast, salt. Contains: eggs and milk product.
